A love for pastry.
A somewhat different Valentines day this year for all those happy couples around the world. If, like me, you don't live with your significant other, the day is doused in an air of dread and sadness with not being able to celebrate it properly. We all deserve a treat right now, Valentines or not, and this is an ingenious way of using up old croissants and transforming them into a decadent, weekend breakfast. Its worth noting that this recipe is adaptable. Any fruit curd will work as will most nuts.
Ingredients:
- 2 croissants (fresh or stale)
- 200g organic mascarpone cheese
- 2 tbsp icing sugar, sifted
- 1 lemon, zest only
- 160g clementine curd
- 60g pistachio nuts, chopped
Method
Cut the croissants down the middle to form a base and lid. Set to one side.
In a bowl, combine the mascarpone, icing sugar and lemon zest.
Assemble the croissants by spreading a thick layer of the mascarpone on each base. Spoon over the curd and sprinkle over the chopped nuts.
Put the tops back on the croissants and dust with icing sugar before serving.
